Ingredients
1 large salmon fillet, about 2 pounds
Salt and black pepper to taste
2 tablespoons Dijon mustard
1 tablespoon honey
1 sheet puff pastry, thawed
1 egg, beaten
1 tablespoon fresh dill, chopped
1 teaspoon lemon zest
Directions

Preheat your oven to 400°F (200°C).
Season the salmon with salt and pepper.
In a small bowl, mix together Dijon mustard and honey. Spread this mixture over the top of the salmon.
On a floured surface, roll out the puff pastry sheet large enough to enclose the salmon fillet.
Place the salmon in the center of the pastry. Sprinkle with dill and lemon zest.
Fold the pastry over the salmon, sealing the edges with a fork. Brush the top with beaten egg.
Place the salmon on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the pastry is golden brown.
Let it rest for a few minutes before slicing. Serve warm.
