1 large onion, chopped
2 garlic cloves, minced
2 carrots, peeled and sliced
2 potatoes, peeled and diced
1 cup chopped mushrooms
1 cup green beans, trimmed and cut into pieces
4 cups vegetable broth
1 can (14 oz) diced tomatoes

Directions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
Add the carrots, potatoes, mushrooms, and green beans to the pot. Cook for about 5 minutes, stirring occasionally.
Pour in the vegetable broth and diced tomatoes. Stir in the thyme, rosemary, salt, and pepper.
Bring the mixture to a boil, then reduce the heat and simmer, covered, for about 25 minutes or until the vegetables are tender.
