Delicious Chocolate Éclair Recipe

Ingredients:
- 1/2 cup water
- 1/2 cup milk
- 1/2 cup unsalted butter
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs

For the filling:
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract

For the chocolate glaze:
- 4 ounces bittersweet chocolate, chopped
- 1/2 cup heavy cream

Instructions:
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
3. Remove from heat and stir in flour all at once. Return to heat and stir continuously until the mixture forms a ball and pulls away from the sides.
4. Transfer dough to a bowl and let cool for 5 minutes.
5. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
6. Pipe dough onto the baking sheet into 4-inch long strips.
7. Bake for 15 minutes, then reduce temperature to 350°F (175°C) and bake for another 20 minutes until golden and puffed.
8. Let eclairs cool completely.

For the filling:
9. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
10. Slice eclairs in half horizontally and fill with whipped cream.

For the glaze:
11. Heat heavy cream until just boiling and pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth.
12. Dip the top of each filled éclair into the chocolate glaze.
13. Refrigerate until the glaze is set.
