Classic Fish and Chips Recipe

Ingredients:
- 4 white fish fillets (cod or haddock)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup cold beer or sparkling water
- Salt and pepper to taste
- 4 large potatoes
- Vegetable oil for frying

Instructions:
1. Prepare the chips: Peel the potatoes and cut them into thick strips. Rinse in cold water and pat dry.
2. Heat oil in a deep fryer or large pot to 350°F (175°C).
3. Fry the chips in batches for 3-4 minutes until soft but not browned. Remove and drain.
4. In a bowl, mix the flour, baking powder, salt, and pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth.
5. Pat the fish fillets dry, then dip them into the batter, coating evenly.
6. Fry the battered fish in the hot oil for 5-6 minutes until golden and crispy. Remove and drain on paper towels.
7. Return the chips to the hot oil and fry again for 2-3 minutes until golden and crispy.
8. Drain the chips on paper towels and season with salt.
9. Serve fish and chips hot with tartar sauce, lemon wedges, and malt vinegar if desired.
