200g raw prawns, peeled and deveined
2 cloves garlic, minced
1 teaspoon grated ginger
2 spring onions, finely chopped
1 egg white
1 teaspoon soy sauce
1 teaspoon sesame oil
Salt and pepper, to taste
8 slices white bread, crusts removed

Directions

Place the prawns, garlic, ginger, spring onions, egg white, soy sauce, sesame oil, salt, and pepper in a food processor. Pulse until the mixture is finely chopped but not pureed.
Spread the prawn mixture evenly over one side of each bread slice.
Sprinkle sesame seeds generously over the prawn mixture.
Heat the vegetable oil in a large frying pan over medium heat. Once hot, place the bread slices prawn mixture-side down, in the pan.
Fry for 2-3 minutes or until the prawn mixture is firm and golden brown. Carefully flip and fry the bread side for 1-2 minutes until crispy.
Transfer to a paper towel-lined plate to drain excess oil. Serve immediately.
