Ingredients
2 lbs beef shank
8 cups water
4 cloves garlic, minced
1 inch ginger, sliced
2 tablespoons soy sauce
2 tablespoons rice wine
1 tablespoon sugar
2 star anise
1 cinnamon stick
4 green onions
1 pound noodles
Salt to taste
Bok choy, for serving

Directions
  1. In a large pot, bring water to a boil. Add beef shank and boil for 10 minutes. Drain and rinse.
  2. Return beef to the pot. Add 8 cups of water, garlic, ginger, soy sauce, rice wine, sugar, star anise, and cinnamon stick. Bring to a boil, then reduce heat to low and simmer for 2 hours.
  3. Remove beef and slice thinly. Return beef to pot.
  4. Cook noodles according to package instructions.
  5. Serve soup over noodles, garnished with green onions, bok choy, and chili oil to taste.
