2 lbs beef shank
8 cups water
4 cloves garlic, minced
1 inch ginger, sliced
2 tablespoons soy sauce
2 tablespoons rice wine
1 tablespoon sugar
2 star anise
1 cinnamon stick
4 green onions
1 pound noodles
Salt to taste
Bok choy, for serving

Directions
- In a large pot, bring water to a boil. Add beef shank and boil for 10 minutes. Drain and rinse.
- Return beef to the pot. Add 8 cups of water, garlic, ginger, soy sauce, rice wine, sugar, star anise, and cinnamon stick. Bring to a boil, then reduce heat to low and simmer for 2 hours.
- Remove beef and slice thinly. Return beef to pot.
- Cook noodles according to package instructions.
- Serve soup over noodles, garnished with green onions, bok choy, and chili oil to taste.
